                                The dangerousness of this knife would highly depend on the wood chosen. You want a fairly hard wood with a really tight grain.

                                                    You should try teak. I think a major factor in your knives' durability is the moisture, and teak is naturally waterproof. Also, the grain of the wood matters. Try aligning the grain perpendicularly to the cutting edge.

                                                        The Lignum Vita knife may have cut better than the Ebony due to design rather than wood quality. As you stated, the Ebony had an extremely thin edge, and with the chunks missing, it would not cut as well. I noticed they also had different designs, which, for the purposes of material testing, can produce flawed results.

                                                                        Lignum vitae is a very hard and dense wood with a complex grain structure. If you take the time and run it through the grits up through 10,000+, you can get it sharp enough to shave with. I've seen a properly sharpened Lignum vitae knife cut paper thin cucumber slices, but that knife was much heavier than yours, and has been honed with a 30,000 grit whetstone.
